Breakfast Ricotta Toast with Honey

Sometimes I end up with things in the fridge that I have no idea what to do with. Like sour cream. What am I supposed to do with a half a carton of sour cream? (Seriously, if you have ideas, leave them in the comments, I’d love some help!) Recently we’ve been having that issue with ricotta cheese since we started testing and eating these delicious pancakes. Sure we could (and have) eaten pancakes two days in a row, and we’ve also made some pretty tasty scones with ricotta cheese, but when you’ve gone big for one breakfast, it’s nice to take it easy for the next one.  So this time when I ended up with that lonely ricotta carton on the top shelf, I decided to put it to good use. And since fancy toast is all the rage, I thought it was time to make some fancy toast.Breakfast Ricotta Toast with Fresh Berries and Honey | Soymilk + Honey

I had a friend make a breakfast toast with ricotta cheese a few months ago, and though I never got the recipe from her, I remembered that it was delicious. With a little tinkering and a little tasting, we ended up with a ridiculously easy and incredibly tasty breakfast option. It barely needs a recipe since it’s so easy – so it’s not the most exact recipe you’ll ever see. But this should be one of those fun dishes that turns out differently each time you make it. And since it’s super customizable, you can use whatever fruit you have in season. We live near Mexico so we can get berries pretty much all year long, but pears or peaches would be tasty as well.

Since I was making this with leftover ricotta that we used in the pancakes, it wasn’t the best of the best. But if you’re really looking for flavor, splurge on the good stuff. Or make your own. If you’re eating it plain like this, I’d also recommend going for the full-fat version. It tends to have less sugar added and it tastes a bit better.

Breakfast Ricotta Toast with Honey

Serves: 2
  • 2 slices of bread - you can use breakfast bread, cinnamon raisin bread, whatever you want
  • ⅓ cup ricotta cheese (use the good stuff)
  • a pinch of cinnamon
  • ½ teaspoon sugar
  • Berries or fruit for topping
  • Honey
  • Optional: sliced mint for topping
  1. In a small bowl, mix the ricotta cheese with the cinnamon and sugar. Taste and adjust if necessary. If you're not a cinnamon fan, you can also skip the cinnamon.
  2. Toast the bread.
  3. Spread the ricotta mixture on the toast and top with the berries.
  4. Drizzle honey over the fruit and top with mint if you're feeling minty.

p.s. The bread in the picture is a seeded honey bread from Costco and it is fantastic! I highly recommend trying it if you are addicted to live near a Costco like I do.
