Healthy Rosemary and Apple Breakfast Sausage

Serves: 3-4
Ingredients
  • 2 teaspoons extra virgin olive oil
  • ½ granny smith apple, cored and diced
  • ½ yellow onion, diced
  • 1 large clove garlic, minced
  • 1 lb ground turkey (I usually get the lean, not extra lean, just for the extra flavor)
  • 1 Tablespoon maple syrup
  • 1 Tablespoon chopped fresh sage (1 teaspoon dried if you don't have fresh)
  • 1 teaspoon chopped fresh oregano
  • 1 teaspoon chopped fresh thyme
  • ½ teaspoon chopped fresh rosemary
  • ¼ teaspoon sweet paprika
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
Instructions
  1. Preheat the oven to 350F.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the apple and the onion, stirring until its soft and starting to brown, about 3-5 minutes.
  3. Add the garlic to the pan and cook for an additional minute or so.
  4. Remove from heat and set aside to cool.
  5. In a large bowl, mix the turkey, maple syrup, spices, salt, and pepper. Mix in the slightly cooled apple and onion mixture.
  6. With your hands, gently mix everything together and then shape the mixture into 8-10 patties .
  7. Heat a large nonstick (oven safe) skillet over medium-low heat and coat with cooking spray. Add the patties in a single layer and cook until browned on both sides, about 3-5 minutes each.
  8. Transfer the pan to the oven and cook for an additional 5 minutes or so until the patties are cooked through.
